Production
Made from a selection of small Manseng from the older vines. The grapes were gathered and successively sorted 3 times after 'passerillage' ('raisining' - a technique used in the production of the great sweet wines to allow the grapes to become overripe) in November and December.
Vinification
The grapes were picked off from the bunch, moderately pressed and the must 'débourbage' (filtered to remove any deposits). Fermentation then took place at controlled temperatures, and a selection of the wine most suited to aging was transferred to oak barrels for 12 months. The wine was then stored for 8 months in stainless steel vats before bottling.
Tasting
LOOK: Brilliant golden yellow.
NOSE: Powerful and of grand elegance, ideally marrying vanilla and coffee aromas brought by the oak barrels, along with overtones of orange, apricot and quince.
TASTE: The initial taste is full and dense. The wine evolves to display quickly its vivacity and grand aromatic expression. The strength of the flavour which develops renders the aftertaste infinitely long
Conservation
This wine of 2010 will reach an exceptional quality and fullness when its ardent adolescent character quietens down in around 10 years time.
