Production

Produced using large and small Manseng grapes from the old cépages noble vines found in Jurançon. At overmaturity after 'passerillage' ('raisining' - a technique used in the production of the great sweet wines to allow the grapes to become overripe) the grapes were gathered and sorted successively by hand at the beginning of November.

Vinification

The grapes were moderately pressed, the must 'débourbage' (filtered to remove any deposits), fermented under controlled temperatures and aged in the vats before bottling.

Tasting

LOOK: Intense lemon yellow.
NOSE: Fine and elegant, combining the freshness of citrus fruits, with beautiful flavours of apricot, blackberry, quince and cinnamon.
TASTE: This wine typically combines the smoothness and power of small Manseng with the boldness of the large Manseng. The mellowness and roundness of the first taste evolves to a perfect equilibrium between its full structure, its vivacity and its powerful aromas of ripe fruits. The aftertaste is lengthily scented.

Conservation

The wine is ready to drink now, but will age well for 5 to 8 years.
