The Late Harvest status (Vendage Tardive in French) is governed by a text from November 4, 1994, published by the National Committee of the INAO. It requires the harvest of lands preselected for their potential be overseen by a commission. The minimum sugar content of the yield should be no less than 272g / l . The harvest of elected plots can not be done before a certain date chosen only by the INAO. The wine from these plots is then subjected to the double controls of tasting and analysis by an expert jury for almost a year and a half before the sacred title of "Late Harvest" may be applied, guaranteeing its quality and its inimitable typicality.
The Etoile des Neiges is the most audacious of the Late Harvest wines. A 1Ha plot of Gros Manseng old vines, facing south, growing in well-draining stony soil, two successive selections leaving the finest of the grapes on the vine to endure the attentions of the sun, cold rain and snow...

The last harvest of the year, the Late Harvest is always a unique and moving moment for our winemakers. Picking the grapes that have been pampered for months is done by hand, gently. The winemaker selects again the best sun-soaked grapes of a shiny copper color , wrinkled with frost, like the grapes of Corinth. These precious grapes are then pressed very gently to extract a dense juice, full of flavor and character. The wine is then made by the same rules: careful, natural attention, and an utmost respect for the quality of the grapes. 

Tasting

COLOUR: Straw yellow with golden tints.

NOSE: A myriad of aromas on the nose.

PALATE: An exceptional broad attack, round, explosive, fleshy ... well balanced.
