Production

The 'Château Les Astous' is one of the grandest and most prestigious in Jurançon. Nested in a sunny valley and protected from the wind, rich in "poundingue de Jurançon' (pudding stone of Jurançon) small Manseng grapes were harvested by hand and successively sorted 3 to 4 times after 'passerillage' ('raisining' - a technique used in the production of the great sweet wines to allow the grapes to become overripe).

Vinification

The grapes were pressed separately, then 'débourbage' (filtering the wine to remove any deposits) before slow fermentation at controlled temperatures. After 18 months of ageing in the vat, in the best conditions for preservation, the bottling process was effected under a sterile atmosphere.

Tasting

LOOK: Shade of pale yellow of grand intensity.
NOSE: Powerful, finesse, freshness and remarkable intensity with tones of ripe fruits (orange, mandarin, quince, lemon and vanilla).
TASTE: The attack is massive and lively with a perfect balance of intense fruit aromas, richness, power and complexity. The aftertaste is infinitely long.

Conservation

Already charming, but ageing for 6 to 8 years will bring to the wine wisdom, and additional finesse conferred from the 'terrior', assuring that the wine will keep well for 15 years.
