Production

The grapes are selected from a Vineyard situated on a hillside, from the property of Jean-Charles Lasserre. The ‘terroir’ – (area or region of land where the grapes are grown. The term denotes the combination of soil, climate and exposure to the sun – that is the natural physical environment of the vine) here is quite remarkable with its clay gravel and chalky limestone. The Vineyard is very well kept by the Winegrower in a traditionally manual style.

Vinification

The manually produced grape-harvest is sorted selectively, and only the fruits of the highest quality are used to produce this sweet Jurançon wine. The grapes are drained, moderately pressed, and the must undergoes static ‘débourbage’ (filtering the wine to remove any deposits) before fermentation takes place at 18°-20°C. The wine is then left to age on the lees for 12 months before bottling.

Tasting

LOOK: Bright straw yellow.
NOSE: Very intensive aromas of ripe apricots and pineapple. Light shades of candy and even toast complete this large aromatic palette.
TASTE: The initial taste is full with many flavours (dried apricot, medlar and passion fruit) and much substance. The aftertaste is long, scented, and has a nice acidity without heaviness.

Conservation

The wine is ready to drink now. But will still be excellent to drink in 8 years
